Chinese eat a lot of peanuts. We eat peanuts when we have parties, games, watching TV, family time, picnics and even given as gifts. My parents say they are very nutritious. They are a must during Chinese New Year. Crunchy Peanut Candy is another favourite. We love the crunch, the flavour and the sweetness. I made this and the Crunchy Sesame Candy Bars for Chinese New Year which falls on 14th Feb this year together with Valentine’s Day. So, it’s a double celebration.

I have discovered to my great delight that slices are easy to make, delicious to eat and makes for a great dessert. Chocolate Shortbread Slice is another one that I have just learned. The best part is there’s no need for baking…..just melt, mix and chill. The chocolate part was creamy and beautiful which goes well with the crunch from the shortbread. I love to see the big chunks of the shortbread in this slice. It gives you the bite as you eat it.

I love both mushrooms and spinach but didn’t know they make a lovely combination until I saw it at Authentic Food Delights by Sushma Mallya. Immediately I fell in love with the dish when I saw the ingredients. The recipe was simple and delicious. It was creamy with a beautiful mild hint of curry and spiciness. My family is not very keen on mushrooms so I enjoyed most of it. I was secretly happy….haha.

Chewy Scallion Omelette Pancake Rolls is another of my family’s favourite. It is also a very popular Chinese dish made using the Chewy Chinese Pancakes. Occasionally we take this for breakfast but most of the time it is part of our evening meal. It goes very well with the Turkey Mince Tomato Egg Soup ….perfect combination. We also love it with a mixture of balsamic vinegar and soya sauce with some sesame oil added as a dip. It is even great as a snack. It makes a great party food too.

Yesterday I showed how to make Chewy Chinese Pancakes at home using the hot water dough method. As I said, these pancakes are great for Peking Duck or Aromatic Crispy Duck. They are very good with char siu chicken or pork. They are great as wraps for any meat.

Chewy Scallion Pancakes is another very popular Chinese snack, even great as a meal with Turkey Mince Tomato Egg Soup. We find them to be a fabulous combination. It is light and satisfying. It has recently become my family’s favourite.

These chewy Chinese Pancakes are the best for making any Chinese wraps. They taste very different from store bought ones or those eaten at the restaurant. Once you have tried these, you will not want to use the ready ones any more. They are the best for Peking Duck or Aromatic Crispy Duck, our all time favourites at home. It is very expensive to eat these in restaurants so why not try it out at home. The pancakes may be a little time consuming but it’s worth all the effort. You can use it to wrap other meat dishes too.

This Turkey Mince Tomato Egg Soup is an inspiration from a couple who invited us for a lovely dinner recently. We were served this light, delicious soup with scallion (spring onion) pancakes. It was really delicious. It kept me thinking for days and I told myself I had to make it. My friend made this soup vegetarian but I added turkey mince as I had some leftover turkey mince from making turkey wantan for lunch. I made scallion pancakes to go with it too. They are such a beautiful combination. I must say my family fell in love with it at first taste!

Peanut butter and banana go well together. Try if you don’t believe me, unless you don’t like either one. Better still, sprinkle with some sultanas or other dried fruits. But what about combining them to make a cake? Well, it’s always fun to experiment. I did that the other day to share with friends. I wasn’t too sure how it would turn out. The result? It was very moist. My friends all liked it. As for me, I think I would prefer just all banana cake. So, it really depends on individual taste.
