Chewy Sweet Potato Gnocchi in Palm Sugar Syrup
Sweet potato again! I love sweet potatoes very much and my world can’t go on without sweet potatoes…..of course the other one being condensed milk. I like condensed milk so much that I even made my own! Click How To Make Condensed Milk to learn how to make your own. Maybe I should grow my own sweet potatoes…haha.
Sweet potatoes make great desserts. I was really delighted to discover that it is possible to make a sweet potato gnocchi dessert. The gnocchi was chewy and really delicious in palm sugar syrup, drizzled over with coconut cream. My daughter liked it very much.
The recipe is very simple and I find it fun to make.
Ingredients A (palm sugar syrup)
250g water
250g palm sugar (gula Melaka)
Put to a gentle boil in a pot until the sugar dissolves. Remove from heat.
Ingredients B (coconut cream)
1C coconut cream
1/4t salt
Put Ingredients C in a pot and boil gently. Remove from heat.
Ingredients C
500g sweet potatoes (peeled and diced)
200g tapioca flour
Put the sweet potato dices in a pot. Add some water, maybe half a cup, and let it boil gently until cooked. Strain and mash the sweet potatoes while hot. Add the tapioca flour and knead to a soft dough. You may have to adjust the amount used depending on the potatoes.
Pinch small pieces and roll them into a ball. Make patterns if you like.
When all is done, put some water to boil. Put in the gnocchi. When they float, dish up with a slotted spoon and straight into the palm sugar syrup to soak for a while. You can give it a quick boil too. To serve, spoon some of the gnocchi into a bowl with some palm sugar syrup and add some coconut cream on it and enjoy.

You can publish a book titled 101 way of using sweet potatoes. If you do grow them I’m sure you make good use of the delicious leaves too!

I love the idea of dessert gnocchi! Yum! I just made sweet potato gnocchi with umami flavors for Penny’s gnocchi party tomorrow and this dessert gnocchi would be a great one to follow up with - my daughter would sure love it!

okay, we both love sweet potatoes and I do have a liking to condensed milk … but what about the shrimp Mary? … would that be your third favorite? - this is an outstanding recipe, sub the palm sugar and it could well be a southern Creole dessert….

Two more things that I absolutely love aside from sweet potatoes and condensed milk are palm sugar and coconut milk. I’ll try this with rice flour. hope to make this soon when I have some sweet potatoes. YUM
