Here I come with my favourite again…..condensed milk! Those who follow my blog know that I LOVE condensed milk…..so much so to the point that I made my own. A daily dose in whatever way makes me happy and I’m sure makes me sweeter, too…..haha. Click How To Make Condensed Milk to learn how to make your own.

Chinese New Year is not over yet and my Chinese New Year will not be complete without something with condensed milk. It’s an auspicious occasion meant to be filled with lots of sweet goodies to bring sweetness to life.

Condensed Milk and Pine Nut Slice is probably another rare combination but a really delicious one. In fact this slice contains other favourite ingredients of mine which are coconut, peanut butter and Horlicks. They added extra flavour to this slice. This is a beautiful dessert to have with a cup of tea and great for any parties.

This recipe is again a simple and easy one. I made it for Chinese New Year Eve party.

Ingredients A (base)
4C biscuit crumbs
125g butter
3T peanut butter

Slice base

Slice base

Melt the butter and peanut butter. Pour into the biscuit crumbs and mix well. Press into a paper lined tin and chill for a while.

Ingredients B (topping)
1 & 1/2 C pine nuts
1C desiccated coconut
1/2C Horlicks
400g condensed milk

Add the pine nuts topping

Add the pine nuts topping

Mix the pine nuts, coconut and Horlicks well and then pour onto the base above.

Pour condensed milk over topping

Pour condensed milk over topping

Pour the condensed milk over it to cover. Then bake in a preheated oven at 180 degrees Celsius for about 20minutes or until the top turns caramel. Remove, let it cool down and chill in the fridge for a few hours until completely set before cutting.

For your information, I noticed that the base is a little too crumbly but the top portion was very delicious. If I make again, I will change the base. I will definitely be making this slice again. I really love the beautiful crunch from the pine nuts combined with all the beautiful flavour of the other ingredients and the sweetness from the caramelized condensed milk.

Sarah, Maison Cupcake  on February 19th, 2010

Mmm these sound very nice, I always have some horlicks in the house as it’s the only thing my father drinks instead of tea!

Anju  on February 19th, 2010

kate the bake  on February 19th, 2010

These looks great (I loved the look of your new year feast too)!
I want to try this with a gluten free base, but do you think it would taste ok without the horlicks (it contains gluten)?

Cheah  on February 19th, 2010

Wow, Mary, another of your creation! Pine nuts are great!

anncoo  on February 19th, 2010

I’m going to make pineapple slice which I still have some leftover pineapple jam.

The combination of condensed milk and pine nuts is really rare, yet the slices look very inviting. Could I have a bite right now?

Mary  on February 19th, 2010

@Divina - You sure know me well enough to read my mind….LOL. Divina, you are just so sweet! :D

@Sarah, Maison Cupcake - I should make friend with your father :D I always add Horlicks to hot milk….very delicious.

@Anju - Thanks very much for visiting and for your lovely comment :)

@kate the bake - Thanks very much! :) I think it should be fine without the Horlicks though I have not tried it yet. The Horlicks just give it extra flavour and also will make the topping harder, just what I thought. Maybe I would substitute it with milk powder. Give a try. I’m sure it will still be very delicious. I would love to know your non gluten version.

@Cheah - Not a 100% successful creation though because of the base but happy enough that it’s very delicious :D

@anncoo - Thanks very much! Let me check. Oh, I’ll dig out all the pine nuts from other slices and put into one and reserve it for you :D Oooh, love to see your pineapple slice. I’m sure it’s very delicious. You are so good in baking. I have to catch up with you! Maybe you should take me to be your student :P

@Christine@Christine’s Recipes - Aha, we are in the same boat! Don’t you think we should start a condensed milk club? :D Come, there are some more slices for you :)

@Sushma Mallya - Have fun trying! I’m sure you will like it very much if you like the crunch and condensed milk. It’s my favourite…mmmm :D

@pigpigscorner - We are in the same boat! Great you are my condensed milk friend :D

@Olive ♥ - Thanks very much, Olive! Yeah…we are in the same boat….a bigger boat….loving coconut & condensed milk :D We are sweet ladies :P

@Nancy Aka Spicie Foodie - Thanks very much, Nancy! A thrill to know you love condensed milk too :D

@SKip to Malou - You are one more very sweet lady! We are in the same league :D I think licking condensed milk is one of the most fun things to do …LOL. Haha…look out for the mail box! Hope the postman doesn’t eat them :P

@Angie@Angie’s Recipes - We must be having similar sweet tooth :D I love your desserts too…just look soooo good…mmm

@Shirley - Yes, simple & easy. I’m sure your son can make them too. He’ll have fun making and eating. Mommy can do the cleaning up :D

@3hungrytummies - I wish I can send them through the computer for you :P

@5 Star Foodie - Oh, you can get your girl to make it for you. She’ll have fun and enjoy it :D Hope you have the pine nuts.

@Erica - Yeah…..more condensed milk friends :D Imagine if all of us who love condensed milk come together! Wonder what would happen….LOL

@Daydreamer Desserts - Thanks very much! Have fun making and eating :D

Food o' del Mundo  on February 19th, 2010

Oh Mary - you’ve done it again! I’ll have to substitute something for the Pine Nuts - they’re $20 PER Pound here - OUCH! ~Mary

@Sook @ My Fabulous Recipes - Thanks very much, Sook! You’d love it even more when you taste it :P

@Janice - I’m agreeing with you….the trick lies in the condensed milk I believe….mmmm….gooey & sweet. It has the power to make me happy :D

Mary
These look fantastic! I love the touch of peanut butter in the crust and the addition of pine nuts and coconut.
By the way, blood oranges are sold in a lot of supermarkets in the US and they taste like regular oranges, except maybe a little more sour.
