Creamy mushroom and spinach

Creamy mushroom and spinach

I love both mushrooms and spinach but didn’t know they make a lovely combination until I saw it at Authentic Food Delights by Sushma Mallya. Immediately I fell in love with the dish when I saw the ingredients. The recipe was simple and delicious. It was creamy with a beautiful mild hint of curry and spiciness. My family is not very keen on mushrooms so I enjoyed most of it. I was secretly happy….haha.

Here’s the recipe that I adapt. I don’t give the exact amount here because it’s really up to individual taste. I like the taste of this dish to be mild in the curry taste so that I can still taste the sweetness from the mushrooms and cream. It’s also important to fry the mushrooms under high heat in a wide bottom pan so that the moisture that’s released from the mushrooms dries up quickly.

button mushrooms (washed and cut)
spinach (washed & drained)
big onion (sliced)
double cream
curry powder
chili (washed and chopped)
fried ginger oil

Frying the mushrooms under high heat

Frying the mushrooms under high heat

Heat up some oil in a frying pan. Add in the sliced onion and fry until fragrant. Dish it up. Add some fried ginger oil to the pan. Add the mushrooms and keep stirring. You will hear hissing sound as the water dries up each time it’s released from the mushrooms. Don’t fry too long.

Add spinach

Add spinach

Add the fried onions and spinach and the rest of the ingredients. Give a quick stir and dish up. Adjust according to taste. It’s delicious to go with rice or even poured over noodles or pasta.

I love mushrooms and was looking for something new to do with them - this would be perfect! Too bad I don’t have spinach right now but I think this dish would be good with just mushrooms too!

shannon (the daily balance)  on February 10th, 2010

looooooove mushrooms, so this is great!

thanks for sharing ;)

*new to your blog and lovin’ it!

Mary  on February 10th, 2010

@Erica - Thank you very much :)

@5 Star Foodie - I’m sure it will be good on it’s own without the spinach. It would be drier too cos the spinach makes it more watery. Have fun trying :)

@shannon (the daily balance) - Thanks very much for visiting and for your lovely compliment :)

Julie Lynn  on February 10th, 2010

Mushrooms are lovely and your dish looks wonderful.

I love mushrooms sauteed with onions, garlic, and a little coconut oil served over a baked potato. =)

Mimi  on February 10th, 2010

That looks nice, I would probably skip on the double cream right now though.

@Sarah, Maison Cupcake - I think the double cream gives it a nice flavour and smoothness. I think it tastes good too without it. Always good to try :P
