Creamy Mushrooms and Spinach Stir Fry
I love both mushrooms and spinach but didn’t know they make a lovely combination until I saw it at Authentic Food Delights by Sushma Mallya. Immediately I fell in love with the dish when I saw the ingredients. The recipe was simple and delicious. It was creamy with a beautiful mild hint of curry and spiciness. My family is not very keen on mushrooms so I enjoyed most of it. I was secretly happy….haha.
Here’s the recipe that I adapt. I don’t give the exact amount here because it’s really up to individual taste. I like the taste of this dish to be mild in the curry taste so that I can still taste the sweetness from the mushrooms and cream. It’s also important to fry the mushrooms under high heat in a wide bottom pan so that the moisture that’s released from the mushrooms dries up quickly.
Ingredients
button mushrooms (washed and cut)
spinach (washed & drained)
big onion (sliced)
double cream
curry powder
chili (washed and chopped)
fried ginger oil
salt
pepper
sugar
Heat up some oil in a frying pan. Add in the sliced onion and fry until fragrant. Dish it up. Add some fried ginger oil to the pan. Add the mushrooms and keep stirring. You will hear hissing sound as the water dries up each time it’s released from the mushrooms. Don’t fry too long.
Add the fried onions and spinach and the rest of the ingredients. Give a quick stir and dish up. Adjust according to taste. It’s delicious to go with rice or even poured over noodles or pasta.

This mushroom and spinach dish looks absolutely delicious, not to mention super healthy! My two girls love mushrooms AND spinach, so I think that this could be a wonderful meal for them. The only person in our house that doesn’t like mushrooms is my husband, but I think your dish will change his mind!
