Aha…Sweet Potatoes again! I love sweet potatoes. I went to a Japanese restaurant the other day and absolutely fell in love with the sweet potato patties there. I will have to make them one of these days. I have to think first how to make them. Any suggestion from anyone is greatly welcome.

Well, yesterday I was craving for sweet potato again and thinking of curry also, so I thought curried sweet potato chips would be great. I had that for dinner….only that! It was very delicious but I would like it better if it is crunchy on the outside. But that is only possible if I deep fry it. I baked it in the oven so the texture is soft, but still very good. The curry seasoning was mild and just nice.

These chips are very easy and quick. Just mix the seasoning and throw into the oven to bake for 20 minutes. And that was my vegetarian dinner, very healthy and light. But did it last me through the night? NO! I was miserably hungry in the middle of the night I had to get up to make a drink and eat some biscuits. After all the badminton for the past few days, my body needs proper meal. Just sweet potatoes are not enough. A lesson learned.

Here’s my simple recipe to share:

2 medium sweet potatoes (peeled and cut into strips)
1t sugar
1t curry powder
1t light soya sauce
1T coconut powder
1t oil

Mix the seasoning

Ready to bake

Ready to bake

Mix everything together, spread them in single layer on a paper-lined baking tray and bake at 200 degrees Celsius for about 20 minutes, depending on how thick are your chips. The aroma was so good and the taste was fabulous.

woooo….curried sweet potato chips! I only tried potatoes chips, haven’t thought about baking sweet potato chips, and they’re baked with curry! Sounds good to have some!

Sweet potato patties shouldnt be difficult Mary. Have to share this with you… I had read somewhere that you can just use sweet potato wherever you might use potato for health. So I tried it in my chicken curry. It did give a different twist to the curry with all the Indian spices. Give it a shot.

This looks terrific. Where do I get the coconut powder. Could I put shredded coconut in my food processor until it becomes like a powder?

@Chaya - You can get coconut powder at any Asian shops. They are very convenient to use. I always buy at least a dozen to keep. Using the liquid type here would make the sweet potato chips wet. I doubt you can turn the shredded coconut into powder. But you can try. It probably will add a nice bite to the chips.
