Banana is another of my favourite fruits. I grew up eating lots of bananas. We had many banana trees around the house. We had bananas almost everyday of the year. We love the banana trunks. After the whole bunch of banana fruit is cut and hung up to get ripen further, the whole banana plant had to be chopped down. As children we always looked forward to that moment to play with it. We would carry it to a river nearby and we would have so much fun playing the banana boat. The trunk is so porous that it would not sink. Those were the fun childhood days.
Banana cake is one of my family’s favourite cakes. Every time when there are over-ripe bananas, I will turn them into banana cakes. Bananas make great desserts. But this time I thought maybe I should make something different….Lemon Banana Muffins would be nice I thought. The lemon gives the banana muffins added flavour. These muffins are rather easy to make…. just melt, mix and bake. The recipe is also very simple. I made about 50 of them to share with friends.
9 large bananas (peeled and mashes with a fork)
4 eggs (lightly beaten)
250g butter (melted)
juice of 1 lemon
Melt butter in a fairly big pot over low fire. When it is all melted, add the rest of Ingredients A and mix well.
3t baking powder
Sieve Ingredients B into the pot above and mix well. Do not over mix. It may still be a little lumpy but it’s alright.
Use 2 spoons to scoop the batter into cupcake cases. I bought some silicone cupcake cases recently and this is my first time trying them out. I put the paper cases into the silicone cases before filling up with the batter.
Bake at 180 degrees Celsius for about 20 minutes. Test by using a skewer. It’s cooked when the skewer inserted into the centre of a muffin comes out dry.
