Mixed Vegetables Stir Fry With Curry And Honey
I love to cook mixed vegetables. Not only does it look colourful, healthy and fresh but it’s a way to make everyone eat more vegetables. A quick stir fry retains it’s crunchiness and sweetness. I stir fried it with curry and honey the other day and my family liked it very much. There’s a mild curry taste and the light sweetness from the honey. It was very easy to cook. Here’s my simple recipe.
Ingredients
baby corn (wash and cut)
green beans (wash and cut)
carrots (wash and cut)
curry powder
honey
salt
fried garlic oil
Heat up some fried garlic oil in a pot. Add the baby corn, green beans and carrots. Stir fry a little while and Add half a cup of water and let it boil for a few minutes, maybe about 5 minutes, longer if you want the vegetables to be softer. Add the curry powder, honey and some salt to the vegetables. Adjust according to your taste. Mix well and turn off the fire. Dish it up onto a clean plate and serve hot.

@Divina - That looks like vegetable curry which is very popular in Malaysia. It’s very delicious too.
@Faithy - It’s the first time I tried it with curry and honey. Surprised that it was actually delicious.
@Shirley - It does sound unusual to me too in the first place but it’s actually delicious. It should just be very mild in flavour.

I’m supposed to make a mixed vegetable dish similar to yours but with coconut milk, other spices and curry leaves. The dish is very colorful.
