Very appetising Thai Mango Salad

I thought it most romantic and loving when my beloved husband gave me a surprise on the first day of the New Year by making my favourite salad….Thai Mango Salad. He hardly cooks and any kitchen work just frightens him. So to make this salad for me has to be a huge effort from him! It took him quite a long time to peel, cut and slice the mangoes and other ingredients into thin, even strips and also to chop up the onions and garlic finely.

This special Thai Mango Salad just has to be the best thing I have eaten on the first day of the New Year. As usual, it is always greatly delightful to know we’re still deeply in love after more than 20 years of marriage.

I thought it very amusing when my hubby’s colleagues gave him a very nice Thai recipe book a few years ago as a farewell gift even though they knew he doesn’t cook. I think the simplest one that he felt able to do was the mango salad. I must say he did excellently well. Very proud of him!

The recipe is quite simple except all the cutting and chopping to do. It’s very appetizing. Here’s how to do it.

Ingredients A
2 mangoes (not too ripe)
a handful of coriander (washed and chopped)
2 small shallots (peeled and chopped finely)
1/2 garlic (peeled and chopped finely)
1/2 red pepper (washed and cut into strips)
1/2 green pepper (washed and cut into strips)
juice of 1 orange
juice of 1 small lemon

Peel, cut and slice the mangoes

Ingredients B (seasoning)
About 2T fish sauce (nam pla)

Mix everything together

Mix everything together

Put all the Ingredients A into a mixing bowl. Add in the seasoning and mix well. Serve chilled or just as it is. It’s great with roasts or any other meat dish.

Mary this looks so beautiful- I think your husband should certainly spoil you more! My fave salad has to be an indian salad which is similar to this but has lots of cumin and coriander seed powder and avocado! My first dar of 2010 was fine :) Working on an essay and a new recipe! :D x

@Cheah - Ya, means a lot to me when he did that on the first day of the new year….a very good surprise :) Hope I don’t have to wait too long for the next surprise. Jackfruit! Oh…I really miss that. I bet the salad would be so awesome eventhough I have not tried it yet. I enjoy digging out the fruit from inside the skin. Can’t wait to go back to eat lots of them.
