Pikelet with homemade condensed milk

Valentine’s Day is not here yet but I can start with some fun food early. I’ve just bought a heart-shaped silicon ring the other day to make heart-shaped pikelets for my family. It’s a great way to tell them that I love them. I actually enjoyed making them. Of course I get lots of hugs from everyone!

My family loves pikelets. And if you follow my blog, you probably can guess what I eat it with. Of course with my favourite homemade condensed milk!!! Oh…it was just so delicious. I put so much that it was dripping all over. Well, I had great fun licking it from my fingers. My children are not crazy like me over condensed milk. They love it with butter sprinkled with sugar over it. They don’t know what they miss…haha.

Curried Sweet Potato Chips

Curried Sweet Potato Chips

Aha…Sweet Potatoes again! I love sweet potatoes. I went to a Japanese restaurant the other day and absolutely fell in love with the sweet potato patties there. I will have to make them one of these days. I have to think first how to make them. Any suggestion from anyone is greatly welcome.

Well, yesterday I was craving for sweet potato again and thinking of curry also, so I thought curried sweet potato chips would be great. I had that for dinner….only that! It was very delicious but I would like it better if it is crunchy on the outside. But that is only possible if I deep fry it. I baked it in the oven so the texture is soft, but still very good. The curry seasoning was mild and just nice.

Pineapples make a very beautiful dish, both in colour and in taste. I find it very appetising. I love to use fresh pineapples in my cooking especially in sweet and sour chicken. But this dish, Pineapple Char Siu Chicken is my first attempt. I think it’s delicious and I liked it. If you like something sour and sweet, you’ll most likely like this dish. You can check out my recent post on ‘How To Cut A Pineapple‘ if you have difficulty cutting pineapples. It’s simple and fun.

Peanuts coconut cornflakes slice

I must say I really like this slice for 2 main reasons. Firstly, all you need to do is melt, mix and press into a tin…..no baking needed. That’s fast and fun. Secondly, all my favourite ingredients are in this slice….coconut, peanuts and cornflakes. You just can’t go wrong with this slice. If you are lucky like me who am not allergic to peanuts, I believe you will enjoy this slice.

This is my dad’s favourite dish. It is simple, easy, quick, delicious and vegetarian. My dad always said this dish is nutritious and good for health. I like it because it’s a little sour and sweet. It’s delicious with rice or even scooped over noodles or pasta. My children don’t like raw tomatoes but they like this Tomato and Coriander Egg.

Zucchini Slice

Delicious zucchini slice

Using leftovers is always a pain to me. But these days I’m trying to make use of them after reading a lot of recipes from other food bloggers. Also, after using the left over teriyaki salmon to make Teriyaki Salmon Prawn Patties, I was more determined to try to make good use of leftovers.

This Zucchini Slice is another of such adventure. I had a piece of cheddar cheese left over from making a finger food recently. Then I had a tin of SPAM, the only canned food you can find in my house. I usually use it for making fried rice. I also have a few zucchinis and half a red pepper. I wanted to make fritters but then thought that pan frying is just hard work and greasy all over. I fried 3 pieces though and they were really delicious but too crumbly without flour. Finally I added flour and pour into a tin to bake. It came out very delicious.

Lemon banana muffins

Banana is another of my favourite fruits. I grew up eating lots of bananas. We had many banana trees around the house. We had bananas almost everyday of the year. We love the banana trunks. After the whole bunch of banana fruit is cut and hung up to get ripen further, the whole banana plant had to be chopped down. As children we always looked forward to that moment to play with it. We would carry it to a river nearby and we would have so much fun playing the banana boat. The trunk is so porous that it would not sink. Those were the fun childhood days.

Mango raspberries smoothie

I am finally persuaded……..to enjoy smoothie! I have never liked smoothie. It’s cold, thick and sweet. But lately my children had been enjoying Mango Raspberries Smoothie. They were explaining to me that they were trying to eat more fruits! They served me a glass and….wow…..that was really good! But I felt so cold after that. Imagine having cold smoothie in this freezing weather? I took a look at my watch and goodness me, it was 11 p.m.! I just had to shut down my computer and jump into bed under my thick duvet and off into my dreamland…..zzzzz
