It’s kumquat season again. I’ve just bought 2 packets the other day. I love the bright colour and the cute look. It reminded me of my young days when we enjoyed eating preserved kumquats. They were really delicious. It also reminded me of Chinese New Year where a lot of families decorate their houses with kumquat trees bearing beautiful kumquat fruits because to the Chinese, the ripe kumquat fruit symbolizes prosperity.

Coconut Walnut Slice is what I’m baking now and I’m writing this post for tomorrow. I need some baked food to share with friends this Sunday. So I thought I better bake early as I can foresee a very busy Saturday. I’ve just got home when my daughter called asking me to go and pick her. Looking at the clock, I only have about 1 hour. Can I bake something? Not wanting to do too much washing, I thought a melt and mix would be great. I love coconut so it has to be in. Found a packet of walnuts in my fridge and that would do the trick.

My family loves Chinese cabbage, whether cooked in soup, stir fried or made into kimchi. I use the most when making kimchi. My mom used to cook a lot of Chinese cabbage soup for us when we were young. She would cook a big pot of this soup with pork ribs and we would drown our rice with it. It was very delicious and very filling. This is a very easy vegetable to cook and tastes very delicious.
