Coconut Walnut Slice
Coconut Walnut Slice is what I’m baking now and I’m writing this post for tomorrow. I need some baked food to share with friends this Sunday. So I thought I better bake early as I can foresee a very busy Saturday. I’ve just got home when my daughter called asking me to go and pick her. Looking at the clock, I only have about 1 hour. Can I bake something? Not wanting to do too much washing, I thought a melt and mix would be great. I love coconut so it has to be in. Found a packet of walnuts in my fridge and that would do the trick.
I needed 2 pots to be quick. I turned on the oven to 180 degrees Celsius and then here follows my recipe:.
Ingredients A
250g butter
2C flour
2C desiccated coconut
2t baking powder
1C sugar
Cut the butter into one pot and put on low fire to melt. Give a stir every now and then.
In another pot, add the flour, coconut and sugar. Sieve in the baking powder and give a few quick stir. Pour in the melted butter to the flour mixture and mix well. Line a lamington (shallow) tin with baking paper. Pour in the mixture and press it even. Use a rolling pin to do that…easier and faster. By that time, the oven is also ready. Put to bake for about 15 minutes. While baking, prepare Ingredients B below.
Ingredients B
5 eggs, beaten lightly
1t vanilla essence
2C desiccated coconut
1C light brown sugar
1/2 C dark brown sugar
1C chopped walnuts
Mix everything together in the same pot above (you don’t need to wash it). When the base above is ready, pour this mixture onto it, level it and put it back to bake for about another 20 minutes. You should be able to get this mixture done within 15 minutes, and even wash up everything if you are fast. Heaved a sigh of relief, I sat down to type this while waiting for the slice to be fully baked. Mmmmm….the smell is really so good as I sit and type away….this post for tomorrow and the slice for Sunday. It’s almost done and my post is almost done too. I will download the photos later.
What did I learn today? I can bake and write my post at the same time. That saves a lot of time. I have become smarter and more efficient. A BIG pat on my own back! Alright, I have taken out the slice and can’t wait to try it. I still have sometime to try it out before going to pick my daughter. Gosh…it’s too hot to try. I won’t want to get sore throat.
1 hour later…..
I’m back from fetching my girl. The slice has cooled down….mmmm…it’s really delicious. My children liked it. My youngest daughter hates nuts in desserts but surprisingly she said she liked it in this slice. That makes me happy. I can sneak more nuts into my desserts next time.

Just looking at that gives me a sore throat already lol!*kidding* Lovely, incidentally just bought a packet of dessicated coconut. Should wait till my sore throat gets better before I embarked on this project huh?

Looks like our weekends are very busy but still we can cook and bake. Need a good pat on our back for that. Ooooh…I love cheesecake and ice cream. I suppose I hv to fly over to your side to enjoy that….LOL

Great slice and notice that your pics are brighter. Do you have difficulty cutting up the slice? You cut them when they’re completely cooled?

@Cheah - Thanks. Well, still the same camera and dark environment. It’s gloomy the whole day. The flash helps. Cutting the slice is quite a test of my muscles…LOL. Yes, I cut it when it’s cold but it was hard. Glad my friends all liked it.
