Delicious coconut banana cake

Those who follow my recipes will know that I love coconut. We grew up eating lots of coconuts in a wide variety of ways. My best is still the young coconuts. In a hot country like Malaysia, nothing is more refreshing than young coconut water. Coconut trees are found all over in Malaysia. Coconut cream is widely used in desserts and curries. It gives a beautiful flavour. Combined with pandan (screwpine) leaves, it turns any dish irresistible.

I made a coconut cake last week but it was all eaten up before I was able to take a picture. I made the second time 2 days ago but the picture didn’t come out well and the cake was all gone again. I almost wanted to scream when my hubby finished the last 3 pieces which I reserved for photo shoot. Well, I had to make it again yesterday because I promised a friend to post it on my blog today. Here’s my recipe to share.

Ingredients
125g butter
2/3C dessicated coconut
1C self-raising flour
2/3C sugar
2 eggs (beaten)
1/2C cranberries
1 banana (mashed)
1/2C coconut cream

I add a banana and cranberries for added fiber and nutrients to make this cake a healthier cake. You can omit them if you wish. The banana made the cake very moist. I used an over- ripe banana as it gives a stronger flavour and a natural sweetness.

Melt the butter

Melt the butter

Melt the butter in a pot. Add all the rest of the other ingredients and stir well. Pour into a shallow (lamington) tin and bake for about 20 minutes in 180 degrees Celsius or until a skewer inserted into the centre comes out clean.

Wait until it’s cool before you cut for easier cutting. It goes very well with a cup of hot tea or coffee or served with cream.

That’s a very delicious cake. I love coconut but with bananas and cranberries, they are perfect for the holidays.

@Trissa - Haha…yes, getting ready for the festive season. Haven’t thought out what to cook this Christmas. Hope something nice and really festive.

@Divina - When I made this cake, I didn’t think of the coming Christmas. But now I think I must include this cake. May be add icing & some deco to it.

@Barbara Bakes - It is really easy to make this cake and little washing to do….that the best. Just melt, mix and bake.

coconut and bananas are too of my favorite things….I just love the sweetness of bananas in my cakes, and I can never get bored of them!

Yummy! I love to bake cakes but trouble is the boys do not like to eat them except for cheesecakes and chocolate cakes with ganache. They much prefer bread than cakes, so I bake mostly breads but I do have a passion for baking cakes, I ended up taking most of my cakes to office to share with colleagues or give to my neighbour. I bake something for my mom every month too.
