Sweet Potato Jam
Sweet Potato Jam……my new found love! It tastes incredibly good. It’s great with crackers or toasts. Sweet potatoes are nutritious, high in fiber and very good for health. I love them very much whether steamed, boiled, baked or made into desserts.
I was sitting in front of a few sweet potatoes and wondering what to cook this time. I had made Sweet Potato Donuts and Sweet Potato Cake. Suddenly I thought, ”What about Sweet Potato Jam?” It sounded great. Immediately I got down to giving it a go after remembering how we made egg jam, called ‘kaya’, in Malaysia. I was greatly thrilled when it turned out very delicious. Here’s my recipe to share.
Ingredients
6 eggs
250g sugar
500g sweet potatoes
200g coconut cream
Beat the eggs and sugar in a mixing bowl until the sugar dissolves.
Peel the potatoes, cut into smaller pieces and steam until cooked.
Mash it while it is still hot.
Add the coconut cream and egg mixture and mix well.
Put the sweet potato mixture into a double boiler to cook. Stir every now and then until the mixture thickens. Let cool completely.
This sweet potato jam goes great with crackers, bread or even steamed glutinous rice. It is even suitable for vegetarians. I would say this is a healthier jam which is high in fiber and nutritious. You can use less sugar if you like as the sweet potatoes are already very sweet.

@Divina - Thanks for sharing. I love sweet potatoes and cook it often. Agree with you not to over eat especially those who want to lose weight or seldom exercise. The best rule is to eat in moderation and choose the better evil for better health

@3hungrytummies - Oh…I wish I have a sweet potato farm! My parents used to grow a lot of sweet potatoes when we were young. They grew different types and all of them are very nice. Maybe my retirement plan

Wow, Mary, does it tastes anything like kaya? I would love this if it does! The last time I baked a potato, it burst in the oven! Serves me right for not punching some holes on the skin.

@Jeannie - It’s quite similar except that it has the fragrance of sweet potatoes too which I like. So I think it depends on individual. Oh no…be careful when you bake potatoes, especially in microwave oven. That can be very dangerous.

@Lesli - Thanks very much for dropping by! I must say that anything homemade must be consumed within a short time unlike those sold in the shops. This is because no preservatives are used when you make at home. That’s why homemade is still the best. However, if you add in lots more sugar, it can be kept longer, though I won’t advice too much longer. And I don’t like my food too sweet. hope my answer helps. Never heard of sweet potato jam. But now I know. You do love sweet potatoes. I love them too. They’re do stabilize our blood glucose evenly throughout the day. Although just not too much.:D
