Lovely sweet potato cake

Looking for a healthier cake? I would go for Sweet Potato Cake. It’s delicious, comes with its natural sweetness and flavour. If there’s anything that I almost always have in my kitchen are sweet potatoes. I love sweet potatoes. They are good for health. I love it baked, boiled, steamed or made into desserts. I’m always trying to find other ways to cook them. I have never tried to make a cake out of it. If we can have carrot cake, why not sweet potato cake? It should be quite similar and taste equally good if not better. Well, I tried it the other day and I really liked it. Here’s my recipe to share.

Ingredients A
250g butter
1C brown sugar
1C pitted dates (chopped)

Sweet dates

Sweet dates

Put everything in a pot and stir under lower fire until butter is melted.

Ingredients B
500g sweet potatoes (about 4 small ones)
5 eggs
3C self-raising flour

Mix well

Mix well

Peel the potatoes and grate. Beat the eggs well. Add potatoes, eggs and flour to the butter mixture and stir well.

Ready to bake

Pour into a shallow (lamington) tin and bake for about 20 minutes at 160 degrees Celsius. Let cool before cutting. You can serve it with ice cream or creaam if you like but I love it plain with a cup of hot tea. I love the natural sweetness of the sweet potato and dates.

We have more something in common. I love sweet potatoes too but never had it in a cake. Love the addition of pitted dates. They are really good for the skin.

@Ellie - Sweet potato & dates are a lovely combo - my new found love :) Hope you try out soon. My family loves it.

@Trissa - Oooops…I’m not too sure whether it helps in dieting. I’m very bad in counting calories. I only know how to enjoy food…healthy and yet delicious….hehe. But I do know it’s healthier than other cakes. Maybe don’t go with ice cream or cream.

@Penny - Well, its a good time to try…a good substitue for the usual, rich, decadent cakes.

@foodlovee - No, I won’t say it’s healthy…but definitely a healthier cake than one without vegetables or fruits in it….hehe. Just a way to get my family to eat healthier food.

@Mr P - Oh yes, one of 5 a day. Does sound easy to achieve 5 vegetables a day…happy to hear that :)Maybe one day I must make a 5-vegetables cake..that would solve everyone’s problem trying to meet the target. I’d probably end up eating the whole cake alone…LOL

Cake and healthy in the same sentence? I am totally there! hahaha :) This is great, I love sweet potatoes but sometimes get tired of just roasting them or pureeing them — this is a creative way to use them! and I think the dates would really compliment this cake well, I followed the rules and ate breakfast before coming and it helped… a little -_- hee hee great post as always mary!

Oh I am a BIG fan of date…..but I can only get them in Asian stores :(
This is indeed a naturally sweetened dish! I have think of doing a cake with sweet potato for a long time- the natural sweetness is just irresistible!!

@Light Delight with Tou Tou - I hope it’s not too difficult to get from Asian stores. I can easily get them from supermarkets here. They are very delicious and give a natural sweetness to cakes. However they come in different varieties/grades. Some are too dry. The ones in the picture above are really good, more expensive though , but worth it.
