Thai Chicken Coconut Soup
I can’t believe that I am cooking Thai food again. After cooking the Pumpkin, Prawns And Coconut Soup, the thoughts and taste never seems to go away. I remembered I ate 3 bowls and still long for more of it. It drove me to cook again, but with chicken this time and lots of coriander leaves and more chilies. Again, it turned out faboulous. I ate 3 bowls again! Carry on like this, I think I’m going to be in trouble with my weight soon. Well, so thankful that my friends want me to join them for badminton. So, I’m playing 4 times a week now. That’s a lot of calories that I’ll burn off each time…..just very comforting to justify myself for all food indulgence…haha.
Right, here’s another healthy Thai recipe to share:
Ingredients A
600g chicken meat (cut into strips)
Ingredients B (spices)
4 lemon grass (pound)
1/2 whole garlic (peel and chop)
1 big onion (peel and dice)
1 chili (optional)
Fry all the spices until fragrant. Then add in the chicken slices and fry for a while.
Ingredients C
200g coconut milk
4C of water
1 chicken stock cube
2T fish sauce
2T brown sugar
juice of 1 lemon
1 big bunch of coriander (washed and chopped)
Add 4 cups of water to the pot and let it boil for sometime for the flavour of the sices to infuse into the soup. Lastly add in all the rest of the other ingredients in Ingredients C. Turn off the heat when it comes to a boil. Enjoy this beautiful Thai soup. The aroma and taste are just so beautiful. I will surely cook it again soon.

I always love this soup. The aroma that suspends in the kitchen and the the different flavors that the ingredients imparts are a feast to our senses. Can’t go wrong with coconut.

@Shirley - Coconut milk always gives that extra aroma to a dish. We love it in curries and in desserts too. Now I’ve found a new love for it…in soup!
