Fried Zucchini With Eggs is a very simple, easy and quick recipe, yet delicious. My family loves this dish very much. I baked some ready marinated Southern Fried Chicken which my daughter bought. We had rice, zucchini and the chicken for lunch. That was really easy because I only cooked the zucchini. Yet we had a fabulous lunch. Here’s how I fried the zucchini. The amount is good for 4 persons.

Ingredients
5 baby zucchini
3 eggs
3T light soya sauce
1t oyster sauce

Cut the zucchini into slices

Cut the zucchini into slices

Cut the zucchini into strips

Cut the zucchini into strips

Wash and cut the zucchini into strips. You don’t have to peel them. The dark skin is rich in vitamins.Heat up some fried shallot oil in a wide based frying pan. Add in the zucchini strips and fry until cooked.

Stir the zucchini to the sides and knock in 3 eggs. Stir to break them up to make broken omelet. Then stir the zucchini into the eggs. Add in the oyster sauce and the soya sauce and mix well. Adjust the seasoning according to your taste. Dish it up onto a plate and serve hot with rice and the chicken.

I love zucchini. I buy them all the time. I usually saute them in oil with garlic and just salt and pepper. While everyone is doing pumpkin pies and breads, I think I have to do some zucchini breads here. They’re in season all year long. I used to grill them but not anymore. I would like to serve them raw too. Yey, another easy dish to try.

Zucchinis are one of my favorite veggies. I never tried with eggs, it’s a good idea.

@Divina - Thanks for sharing. I think zucchini bread would be lovely. I used to cook the long edged gourd with eggs but since I cannot find them here, I just use zucchini. They have a sweetness of their own. I have not eaten them raw.

This is fantistically simple. Even I can follow and do this, and it turned up tasting nice, altho I put a bit too much salt in it - a consequence of not following it !

this is a very common dish from south of italy, i grew up with it, they use to add grated parmisan and pepper over there ~ CIAO Mary, thank you~
