Fried Zucchini With Eggs is a very simple, easy and quick recipe, yet delicious. My family loves this dish very much. I baked some ready marinated Southern Fried Chicken which my daughter bought. We had rice, zucchini and the chicken for lunch. That was really easy because I only cooked the zucchini. Yet we had a fabulous lunch. Here’s how I fried the zucchini. The amount is good for 4 persons.
5 baby zucchini
3T light soya sauce
1t oyster sauce
Wash and cut the zucchini into strips. You don’t have to peel them. The dark skin is rich in vitamins.Heat up some fried shallot oil in a wide based frying pan. Add in the zucchini strips and fry until cooked.
Stir the zucchini to the sides and knock in 3 eggs. Stir to break them up to make broken omelet. Then stir the zucchini into the eggs. Add in the oyster sauce and the soya sauce and mix well. Adjust the seasoning according to your taste. Dish it up onto a plate and serve hot with rice and the chicken.
