Hand-pulled Noodles And Char Siu Chicken Soup
Making hand-pulled noodles or ramen has been my latest challenge. What a thrill that I finally succeeded to get it right! My family has been enjoying eating my hand-pulled noodles since my success in making them. There are so many ways to cook it. I made the soup type the other day, topped with a big piece of char siu chicken (click here for a super easy way to make char siu chicken). That was so delicious! It is really simple to cook it if you have the hand-pulled noodles and minced meat. Remember, always have a supply of ready marinated minced meat (click here on how to marinate minced meat). It makes cooking really easy and quick. Here’s how I cook it. The amount is enough for 2 persons.
Ingredients A (soup)
100g of minced meat
1 packet of ready washed green vegetables
Heat up some fried shallot oil in the frying pan. Add the minced meat and fry until fragrant and cooked.
Dish up the meat to a pot and add water. Let it boil.
Ingredients B (seasonings)
1t chicken stock granules
1T light soya sauce
1t oyster sauce
2C water
1/4t pepper powder (optional)
When the soup boils, add the vegetables and the seasonings. Adjust according to taste.
Ingredients C
1 bowl of hand-pulled noodles
2 pieces of char siu chicken
To serve, put half the noodles in a bowl. Pan fry the noodles first to warm it up. Pour the soup over the noodles. Top it with a piece of char siu chicken and some fried shallots. Do the same to the other portion. Enjoy it hot.

@Divina - Hi, I’m still waiting for you to come. You will have more than this noodle. I’ll cook for you whatever you like that I’ve put up on my blog. I hope to make the hand-pulled noodles again soon. Hope you make it soon, too, and let me know how it goes. It would definitely be awesome with wonton. I’ll have to make that when I make the noodles again. Thanks for sharing.

Wow, that’s a feast for a noodle soup. I would like to have that. I haven’t made hand pulled noodles yet. But would like to make this soon. I had hand pulled noodles already at the restaurant with wonton. It was good. I hope you can make this for me.
