Delicious tofu mixed vegetables

Looking for a healthy, simple lunch? I’ve one here for you with tofu. Tofu is a healthy food. I seldom cook during lunch. Usually I cook extra in the evening to keep some for lunch. But the other day I just want to pamper myself with something nice, simple and healthy. I searched through my fridge and found a few types of vegetables and tofu. It turned out to be absolutely delicious. It was quite a big plate and I actually wondered if I could finish it. I did! Here’s my recipe to share:

Ingredients
tofu (cut into pieces)
3 crab sticks (cut into 2 and pull apart lengthwise)
1/2 cucumber (peel, de-seeded and sliced thinly)
2 tomatoes (de-seeded and chopped )
1 egg
watercress

Heat up some oil in the frying pan and pan fry the tofu pieces until slightly browned on both sides. Dish it up and add in the crabsticks and fry for a while. Remove on to a plate.

Add some oil and break in an egg. Stir to break it up to make broken omelet. Dish it up.

Add some fried shallot oil and add the cucumber slices. Add some water and fry until it’s quite soft. Add the tomato. Stir through and add the tofu, crab sticks, omelet, watercress and the seasoning. Mix well and dish up. Serve hot. It’s great on its own or with plain rice.

1/2t chicken stock granules
1t light soya sauce
1t sugar

I love tofu. I like it with XO sauce or simple in soups. They’re so versatile and very easy to eat. I’m always looking for some easy recipes to prepare at home. Since mom eats fast all the time, I need something easy yet delicious and flavorful and this is one of those dishes.

@Divina - Thanks for sharing. Agree with you that tofu is very versatile. It’s very plain on its own but lovely when cooked with other ingredients and right seasonings. I hope your mom likes this dish.

@pegasuslegend - Thanks for sharing. I have a few friends who didn’t like tofu cos they have never tried it before. Some had bad experiences. But it is a healthy food. It takes the tastes of others. So cooking it right is important. Try it a few times. I hope you will soon like it.

Emm…mm…I love steamed tofu, cold tofu, deep fried, stir fried…almost anything especially ‘tofu hua’..ha ha ha!
