Delicious fried okra with eggs

Okra Fried With Eggs is another of my mom’s favourite dish. It is a very delicious vegetarian dish. We grew up eating a lot of okra cooked in different ways. My parents planted a lot of okra and we reared a lot of chickens which produced eggs everyday so this dish is a common dish on the table. My mom used to tell us that okra is good for us. In Malaysia, okra is commonly called ”ladies’ fingers”.

Some people may not like the slimy feel or taste but if you cook it properly, it won’t be slimy. I’ll show you how to cook this simple, delicious dish and it is not slimy. It’s another of my family favourite that goes great with rice.

1 packet okra (about 200g)
1 egg
2T fried shallot oil
1T oyster sauce
chopped chili (optional)

Wash and cut off the top ends of the okra and then slice them diagonally.

Heat up a frying pan. Add okra and then the fried shallot oil over it. Add a teaspoon of water to it. You will notice that the okra becomes slimy when you add the water. It’s ok. Just keep stirring. When it is almost dry, add a tablespoon of oyster sauce and continue to stir until it is no longer slimy. Knock in one egg and quickly stir through the okra. Dish up and serve hot. If you like, add some chopped red chili as topping.

Looks fabulous. I love okra too but a few people in the family dislike it most especially mom. You know she’s quite picky. I always love simple dish and this is one of those simple dishes I could do at home without the fuss of looking for an ingredient. Thanks for another easy and delicious recipe. Okra is great for bowel movement too.
