What to Write? How to Write?

After setting up everything for my blog, I was more confused. All the terms blew me off and I was quite nervous to put down anything on my blog. I only know that Content is King. So, I wrote and wrote and wrote but nothing was published. Just thinking that my blog will be live for the whole world to see just terrified me. What if I write something wrongly? What if people criticize me? What if people sue me? What if…what if…what if? Come to think of it now, I am amused at myself for being so naive. In fact no one knows and no one actually notices!!! It takes time for people to get to know it and take an interest in it. I learned : Do not go into the negative. Know what you want and be confident to do it.

The mention of kimchi makes my saliva flows. It’s so nice on its own, great for making kimchi pancakes and just goes great with almost any food! I just can’t believe that I disliked it so much when I was first introduced to it by my Korean friends while I was in South Korea. I’m so glad I never gave up trying. Pretty soon I got to like it very, very much. I’m so thankful to my Korean friends who never gave up on me but consistently encouraged and taught me different ways to eat kimchi. We became very close friends through sharing food. Food always builds friendship and brings friends closer.

Here is a very delicious meat ball rice porridge (or congee) using sweet corn water that I made for dinner yesterday. This is even good for breakfast or lunch. It’s even good for little children. It’s again a very simple and easy dish. This is another of my family’s favourite.

I actually used the left-over water from boiling sweet corn. That makes the porridge exceptionally tasty. My family just loved it.  When boiling the sweet corn, add in half a teaspoon or more of sea salt to the water, depending on the amount of water and sweetcorn in the pot. There should be enough water in the pot to almost cover the sweet corn. The sea salt will bring out the sweetness of the sweet corn. There should be the right amount of the sea salt to bring out that sweetness. Taste the sweet corn when it is cooked.

Poussin, also know as spring chicken, is my family’s favourite. The texture of the meat and taste is really good. I usually buy ready marinated ones and just bake it. You can eat it on its own, make sandwiches, for topping noodle soup, fry with noodles, eat with rice or chips and many other ways. The other evening I used it to make a nice salad with yoghurt, green beans and coriander. That was delicious! It’s simple, easy and healthy. It’s a good way to eat youghurt too. Recipe here to share:
