I was really so thrilled and happy when my Espresso Coffee Cake came out so awesome last week. I was really over the moon. I made it again the day before and it was all gone the next day! I was so excited that I wanted to try out something new with coffee. Since the expresso coffee cake was so good, I thought I would try expresso coffee swiss roll. This is my first attempt in making swiss roll. I made it yesterday and it came out very successful….just fabulous. The cake was very moist and soft and full of coffee flavour. This Ginger Wine Soup is strong, nutritious and tastes awesome. I suggest you don’t drink a big bowl in one go. A small Chinese bowl of the soup would do.

Ginger Wine Soup is very popular in my family as we grew up. This is a Chinese health-building soup. It’s either chicken wine soup or pork wine soup. My parents believe that it is very nutritious and very good for health. I still remember my dad would bring a bowl to me every night while I was there at my desk studying. My parents believe that nothing in life matters anymore once you lose your health. So taking care of our health was my parent’s top priority. I’m really thankful to them for doing that because now I know how to take care of my family’s health.

Sweet and sour fish for dinner makes everyone happy. I made an awesome dinner the other evening. I cooked 2 sweet and sour black pomfret fish. The fish were actually quite big and we finished them all. I’m very happy as long as I can get my family to eat fish. Pomfret is a great fish for this dish. You can use the black or the white pomfret.

I also fried my dad’s favourite vegetable dish of leafy vegetables and eggs. The kimchi that I made a few days was a great addition to the lovely meal. Cooking the sweet and sour fish is very easy. It’s quite similar to cooking the sweet and sour pork. My daughter helped me to make the sauce. I showed her my blog post for her to refer. She felt so proud she helped me. I’m also happy because she is learning.

Korean Kimchi….a great food to go with almost any Asian food. I’m always thankful to my Korean friends for introducing me to their food and teaching me different ways to eat kimchi. It’s such a healthy, vegetarian dish.

We have been enjoying kimchi every meal since I made it a few days ago. There are quite a few dishes that I would want to make using kimchi and one of them is Kimchi Pancake. I made some yesterday. Best espresso coffee cake (without walnuts)

Coffee Cake is one of my family’s favourite cakes. I used to make excellent coffee cake back home but had never been successful in creating that moist, fine texture and that intoxicating smell of coffee since I came here. I just have no clue why my coffee cake doesn’t turn out excellent. I had probably tried at least 15 times without success! Talk about determination, I haven’t given up yet. I can only guess that it’s either the oven or the ingredients.

Well, I tried a different recipe when I made an espresso coffee cake the day before, hoping to get it right. But my biggest mistake was adding walnuts! I just thought that walnuts would make it a better cake but I was wrong. The walnuts spoiled the awesome smell of coffee. I had to try again.

Teriyaki Salmon….oh it is really so GOOD!

Last week I made Teriyaki Chicken which we found it awesome to go with rice and a stir fried vegetable. I thought I would try the marinade with salmon this time. I love the texture of salmon but I don’t like the strong smell of it. So eating raw salmon is definitely out of the question. No raw salmon sushi for me.

I did the teriyaki sauce a little differently. I ground the ginger and garlic instead of chopping it until very fine. I used my most wonderful juicer to grind them. I pan-fried the salmon instead of baking it which I did for the teriyaki chicken. I also used some black soya sauce to mix with the light soya sauce. It turned out excellent. The fishy salmon smell was completely taken away by the lovely teriyaki sauce.The sauce looked dark but the taste & texture was awesome.
