Vegetable Fritters With Yoghurt And Orange Raspberry Coulis…..my best ever fritters for breakfast. It’s such a healthy, vegetarian breakfast item. Talk about eating 5 vegetables a day, this is definitely one to go for. It goes so well with yoghurt, salad and orange raspberry coulis. It is simple, easy and quick to make. Here’s how I did it.

Ingredients A (fritters)
1 sweet potato
1 carrot
1 parsnip
4T flour (I use whole meal spelt flour)
2T water (or more depending on mixture)

Peel all the vegetables and grate them into a mixing bowl. Add the water and flour and mix well.

Heat up some oil in a frying pan. Take a small handful of the fritter mixture and give a good squeeze to make sure they stick together. Then flatten it with your hand and pan fry it. When it is brown at the bottom, turn it over to fry the other side until cooked. Use medium fire.

Ingredients B (coulis)
1 orange
4T raspberry jam

While frying the fritters, you can prepare the orange raspberry coulis. Cut the orange into half and squeeze the orange juice into a small pot. Add the raspberry jam and cook on low fire until the jam melts. Stir well and pour into a small bowl.

Serve the fritters hot with some green leafy salad, a big scoop of yoghurt and the orange raspberry coulis. It’s really fabulous.

Lovely vegetable fritters. I think the kids will eat this one. I love it with zucchini but sweet potatoes are my favorites. Any combination of root vegetables will make a great fritter. Thanks for sharing your recipe.

@Divina - Thanks for sharing. I have yet to try with other vegetables like zucchini. I love with more sweet potatoes cos it is sweet and soft after frying.

Yeah, it’s a very healthy, vegetarian breakfast. But I think it’s also a good, light lunch. Love the idea of cooking orange raspberry coulis. Sounds great. ^0^
