Lovely Salmon Salad

I love salmon. I have tried Teriyaki Salmon which is pan fried and another Asian Baked Salmon. I thought I should try boiling the salmon to make a salad with tomato and herbs and my favourite salad dressing. It came out really good. It’s such a delicious starter. It is also a healthy salad. I actually had a big helping. It looks and tastes awesome yet deceptively easy to prepare. Here is my recipe to share. It’s enough for 2 persons.

Ingredients A (sauce)
2 medium tomatoes (de-seeded and chopped)
1/2C coriander (chopped)
1/2C flat-leaved parsley (chopped)

Mix everything together in a bowl. You can use other herbs too like basil and mint.

Ingredients B (dressing)
3 pips garlic (peeled and chopped)
3T olive oil
3T apple cider vinegar
3T honey
3T light soya sauce (I use Kikkoman)

Salad dressing

Mix everything together in a small bowl.

Ingredients B
2 pieces salmon

Boil some water in a pan. Put in the salmon and boil for a few minutes. Test for doneness. Dish it up onto a plate and let it cool down. You can break it up into small pieces or leave it whole. To serve, put some of Ingredients A on a plate. Place the salmon on it and drizzle some salad dressing over it and enjoy.

That’s a great and refreshing salad. I love the usage of herbs as part of a salad instead of just a garnish. They are so healthy and cilantro has the ability to remove toxic metal waste in the body. They are also great for autistic children. They are hard to grow most especially in hot water. Mine just died.

Mary, my best salmon is the one stuffed with sliced apples, fennel with horseradish. It was an entry for a competition. I lost though. I served it with some mushroom gnocchi, asparagus and roasted tomato coulis.

But this salad is just great and healthy. Yum.

My daughter and I have different opinions on eating coriander… Guess who likes and who dislikes?

Salmon is such a hearty piece of fish. I love my salmon grilled, pan fried or poached. It is healthy and delicious.

Coriander is probably my favourite herb and I’ll use it in anything I can. Salad looks incredible and so simple to make. I would probably like the salmon less well done though. Great recipe!

I read your Salmon Salad recipe and wanted to make it for today’s lunch. No fresh salmon in the house — conveniently, I did have a can of pink salmon in the pantry. With a generous amount of your salad dressing poured over a bed of chopped Romaine hearts, red onion, fresh tomato, avocado, and pink salmon, my husband and I completely devoured our Salmon Salad. It was fabulously DELICIOUS.
