I love salmon. I have tried Teriyaki Salmon which is pan fried and another Asian Baked Salmon. I thought I should try boiling the salmon to make a salad with tomato and herbs and my favourite salad dressing. It came out really good. It’s such a delicious starter. It is also a healthy salad. I actually had a big helping. It looks and tastes awesome yet deceptively easy to prepare. Here is my recipe to share. It’s enough for 2 persons.
Ingredients A (sauce)
2 medium tomatoes (de-seeded and chopped)
1/2C coriander (chopped)
1/2C flat-leaved parsley (chopped)
Mix everything together in a bowl. You can use other herbs too like basil and mint.
Ingredients B (dressing)
3 pips garlic (peeled and chopped)
3T olive oil
3T apple cider vinegar
3T light soya sauce (I use Kikkoman)
Mix everything together in a small bowl.
2 pieces salmon
Boil some water in a pan. Put in the salmon and boil for a few minutes. Test for doneness. Dish it up onto a plate and let it cool down. You can break it up into small pieces or leave it whole. To serve, put some of Ingredients A on a plate. Place the salmon on it and drizzle some salad dressing over it and enjoy.
