I was really so thrilled and happy when my Espresso Coffee Cake came out so awesome last week. I was really over the moon. I made it again the day before and it was all gone the next day! I was so excited that I wanted to try out something new with coffee. Since the expresso coffee cake was so good, I thought I would try expresso coffee swiss roll. This is my first attempt in making swiss roll. I made it yesterday and it came out very successful….just fabulous. The cake was very moist and soft and full of coffee flavour. The coffee icing adds further smoothness to every bite. Another very happy day for me! My recipe to share again:

Ingredients A (cake)
6 eggs
3/4C sugar
1T espresso coffee (use more if you like)
1T hot water
100ml oil
1 & 1/4C self-raising flour (sieved)

Stir coffee and oil through the beaten egg

Beat the eggs and sugar for 5 minutes until light and fluffy. Fold in the flour.

Dissolve the coffee with the hot water. Add it to the flour mixture together with the oil. Mix through gently.

Pour into 2 big, shallow tins and bake in a preheated oven at 180 degrees Celsius for about 12 minutes or until a skewer inserted in the middle comes out clean.

Flip over onto a clean piece of baking paper and immediately roll it up with the help of the paper. Leave it to cool. While waiting, you can make the coffee cream to fill the swiss roll.

Ingredients B (espresso cream)
300 ml double cream
2T icing sugar
1/2T espresso coffee (use more if you like)
1T hot water

Mix the espresso coffee and the hot water. Then add to the double cream and sugar. Use a beater and beat until it is thick.

Unroll the swiss rolls and spread a layer of the coffee cream on it. Roll up again with the help of the baking paper, leaving the seam side down.

Slice and serve with more ceam if you like and some strawberry.

Baking cake is really exciting and interesting. I’ll definitely keep learning how to make more cakes and I’ll keep smiling. There’s so much to be thankful and so much to be happy for.

Making Swiss roll reminds me of my days in culinary school. I haven’t made this in such a long time. We only have a small oven so I would probably make a Swiss role just for me. Haha. Just kidding. They are really fattening but it’s good to have them with friends once in a while.

Have to admit it is very fattening. Have to reward myself once in a while….hehe. Need to eat lots of kimchi, juice & exercise to balance out. Trying to keep to the 80/20 rule, ie, 80% healthy food & 20% ‘luxury’ food.

I agree with the 80/20 rule. But I think I went over 20 this month. Time to focus on eating healthy foods. :)

I wish I hadn’t tried out this recipe because it was SO good I ate so much and have totally gone over and beyond the 80/20 rule. Very nice and strong coffee taste but just the right amount. I’m now going to eat a pack of fruits to make up for my overdose of luxury food. Great recipe though and not difficult to make for coffee mornings.

@sherrie - Thanks for sharing. I’m just so amused and enjoyed reading it…..haha. You just need to go to gym more often and drink more freshly made juices to make up….haha
