Fried Korean Kimchi Chicken
Korean Kimchi makes a great combination with any meat. I particularly like to cook chicken with kimchi. The tenderness of the chicken thigh, the flavour and the spicy taste makes this dish an awesome dish, one that you would want to eat over and over again. This dish goes great with plain rice. It’s another of my family favourite. Here’s my recipe to share:
Ingredients A
2 chicken thighs (deboned and cut into small pieces)
2T Korean red pepper paste
1t sugar
1t sesame oil
1/2t salt
2 pieces garlic (minced)
Put everything in a mixing bowl. Mix well and leave to marinade for a while.
Ingredients B (seasoning)
1C kimchi (squeeze out the water and cut into small pieces)
1/2 big onion (sliced)
1/2 red pepper (sliced)
1/2 green pepper (sliced)
1/2 yellow pepper (sliced)
Heat some oil in a frying pan and add the marinated chicken. Fry until almost cooked. Add in Ingredients B and continue to fry until the chicken is cooked. Dish it onto a plate and serve hot with plain rice. It tastes awesome. You can add more chili paste if you want more kick to it.

I love Kimchi. I need to put that kimchi up on my list. I think it goes well with almost every ingredient and every recipe and it brings a lot of flavor too to a simple dish like this chicken.
