Poussin Salad With Yoghurt, Green Beans And Coriander
Poussin, also know as spring chicken, is my family’s favourite. The texture of the meat and taste is really good. I usually buy ready marinated ones and just bake it. You can eat it on its own, make sandwiches, for topping noodle soup, fry with noodles, eat with rice or chips and many other ways. The other evening I used it to make a nice salad with yoghurt, green beans and coriander. That was delicious! It’s simple, easy and healthy. It’s a good way to eat youghurt too. Recipe here to share:
Ingredients A (green beans)
1 packet of green beans (cut in half)
1T light soya sauce
1t chili sauce (optional)
3T oil
1 shallot (sliced thin)
Heat up the oil. Add in the shallot and fry till golden brown. Dish it up. Add in the green beans and fry for about 3 minutes with a few tablespoons of water. Add in the soya sauce, shallot oil and chili sauce. Mix well and dish it up onto a plate.
Ingredients B (poussin)
1 whole chicken breast (cooked)
Tear the chicken meat and toss it on top of the green beans.
Ingredients C (yogurt sauce)
1/2 C apricot yoghurt (or other yoghurt)
1t lemon juice
a small handful of coriander (chopped)
Mix the lemon juice and the yoghurt well. Then pour it over the chicken and finally sprinkle the chopped coriander leaves over the salad. Enjoy your Poussin Salad With Yoghurt And Coriander. It was so good I ate a big plate of it.
Another easy dish with poussin is Baked Poussin With Fried Noodles. It’s very easy and tastes very delicious. We also eat poussin with homemade sushi and that was really good too.

This salad looks really good. Doesn’t require much cooking. I would have to use our regular chicken though.
