Nothing is better than homemade noodles. It is free of preservatives and additives. Apart from the ’somen’ which is white in colour, almost all the rest of the yellow noodles are made with some alkaline water, also called lye water, added to it to give it the more elastic texture. The smell can be quite over powering if too much of this additive is added. My mom always asked us to make our own noodles if we can for health purposes. It is not too difficult to make.
