Sweet and sour pork, chicken, fish or prawns is one of my favourites. This dish is a MUST in every Chinese restaurant or takeaway. However, it can be very frustrating when you don’t get what you are paying for. I have experienced it on many occasions. Some restaurants put colouring to the sauce, some put too much tapioca flour so much so the coating tastes very sticky and thick while some are too sweet. You need a very good balance when making the sauce so that it comes out very tasty and smooth. The meat has to be tender and the dish must have a beautiful, shiny look.

Talk about fast food, burger comes to my mind. So far I only eat burgers at MacDonald or Burger King with chips. They are actually nice. However I am always impressed when I watch burgers being served in some restaurants. They may look very impressive but can be very expensive.

Yesterday I thought I would try to make burger for once; a different burger from what we get outside - Curried Chicken Burger. This is very Malaysian as Malaysia is famous for curry. Maybe I should call it Malaysian Curry Burger. It was so fabulous that my children were going, ‘Oh, this is so good!’ as they took every bite.

My mom is a great cook but she never owns a recipe book. She always seems to get the taste right. I always marvel at the way she cooks. I can only guess that she has an awesome tongue that can always get the taste consistently right each time. I’m sure all the olden days people cook in that manner. These days even with recipe books we can’t get our cooking right. Maybe we should go back to the days of old….train our tongue to taste each dish we cook and adjust.

In Malaysia, oyster omelet is a very popular dish. The omelet is not an ordinary egg omelet. The batter is made of tapioca (cassava) flour and rice flour. It’s an easy recipe. Here I use crab sticks for a change. It tastes awesome too. I’m sure you can also use prawns. The recipe here will make 2 big plates, enough for 4 persons if you are eating it for breakfast. In fact you can eat it any time you like.
