After making a most amazing vegetarian curry the day before, I am just more determined to make simpler, healthy food. So, yesterday I decided to make a vegetarian appetizer of tomato, soya beans, avocado and watercress. It was really appetizing and a great starter. The colours were captivating. It is a very simple appetizer. Now I have fallen in love with avocado and tomato. They taste so fantastic. Here’s my lovely appetizer:
nice cheese (cut into round shapes)
soya beans (boil them)
Use a good cheese. I use White Stilton apricot cheese which is slightly crumbly. The flavour and texture is really good. Soya beans are sold frozen, Bird’s Eye brand. A friend introduced me to eat these wonderful beans. Just put them in boiling water for about 10 minutes to cook. Cool it down and then remove the skin before you eat for better taste. It’s very easy…just give a little squeeze and the skin will come off. It tastes very nice even on its own.
Ingredients B (dressing)
2T olive oil
2T light soya sauce
Mix all the ingredients together. This is a very simple, yet lovely dressing that goes great with many foods.
When you have all the ingredients above, the rest is easy…just assemble them according to your creativity. It really tastes awesome. I don’t mind to eat this everyday. It’s such a healthy appetizer.
