I am still so thrilled that I made a very successful healthy bread the day before. That was the first time I tried to make a healthy bread. Besides it is one that I played around with the recipe and still came out successful. I can only say that cooking does take some courage, some creativity and some risk. And even if it fails, no one really knows. Just own it as your own recipe! How cool is that?
Since I still have quite a few of the buns, I decided to make butternut squash curry to go with them. That was such a great combination……bread soaked in curry gravy. That was again another satisfying, yet healthy meal, a vegetarian meal. Everyone was happy. My butternut squash curry recipe here to share:
1/2 medium butternut squash
1/2 packet Malaysian curry paste
1 big onion (diced)
1 chicken (or vegetable) stock cube
1/2 packet dried coconut powder
pinch of sugar
Heat some oil in a pot. Add in the onion and fry until fragrant and translucent. Add in the rest of the other ingredients and boil for about 10 minutes. Add in the green beans and boil for another few minutes until everything is cooked. That’s it….so simple and fast! This is really so good with the healthy bread that I made. You can try it with other types of bread but I’m sure it will taste different.
I really recommend the Malaysian curry paste here because so far I find it’s the nicest and easiest to use. You can of course try out other curry pastes or even use curry powder. You can add in chicken if you like or even other vegetables. You can use pumkin instead of butternut squash.
