To me, fried rice is a fast food. It is so easy to make and there are so many ways to make it. You can basically throw in so many different things to make fried rice. This is a very popular dish in every Chinese or Asian restaurant and takeaway. To make it a great meal and looking impressive, I decided to make it into a rice parcel, add some colourful salad and some ginger and coriander baked chicken to it. I’m really happy…..it looks great and tastes great!
What makes a good fried rice? To make a good fried rice, you need to use good rice for a start. I use Thai Jasmine AAA rice. You can use basmati rice too but I prefer the Thai rice. You need to use the right amount of water to cook it because you don’t want the rice to be too soft and sticky. The easiest is to use the rice cooker.
The next important ingredient is oil. You cannot skimp on this. You do need enough, not too much though, to give the fried rice a shiny look and smooth taste. Add in chopped garlic and shallot and fry until they are golden. This will add extra flavour to the fried rice. The ingredients that I used are:
Ingredients A (fried rice)
2 pips garlic (peeled and finely chopped)
2 shallots (peeled and finely chopped)
2C of cooked rice (just cooked and hot)
1/2 C green peas
1/2 C sweet corn
1/2 C roasted chicken (diced)
1/2 C crab sticks (chopped)
2T light soya sauce
1/2t chicken stock granules
1/2t pepper powder
Heat the oil in the frying pan. Add in the garlic and shallot and fry until golden and fragrant. Add in the rest of the other ingredients except rice. Then fry until heated through and fragrant. Then add in the rice and keep stirring to break up any lumps. Add in the soya sauce, chicken stock and pepper and stir well. Adjust the seasoning according to taste. Ingredients B (egg to make parcel)
4 eggs (to make 4 fried rice parcels)
Beat one egg and pour into the frying pan to make a thin omelet, as big as you can. Use medium fire. When the egg is set, scoop some of the fried rice into the middle of the omelet. Fold up the sides to the middle to make a neat fried rice parcel. Put a plate over and flip it over. Cut the omelet in the middle and drizzle some chili sauce on it. You can also sqeeze some ketchup or mayonnaise on it if you like. Add some colourful salad and chicken at the side for a great, satisfying meal. Left over rice can be eaten the next day.
In fact you can add other ingredients to the fried rice. You can make a seafood fried rice parcel or even a vegetarian fried rice parcel. All of them will taste great as long as you use the right type of rice and enough oil.
