Making fritters is very simple and easy. It is great for any time…a good starter to any meal, for breakfast, picnic and parties or even with BBQ. It can be vegetarian or otherwise. This is a very popular Chinese and Malaysian street food or hawker food as it is commonly called. A very simple recipe here for you:
Ingredients A (batter)
1 & 1/2 C self-raising flour
1 egg (beaten)
Ingredients B (to add)
1C spring onion (sliced)
1C bean sprouts
1/2C crab sticks (cut into shorter lengths)
Put Ingredients A into a big bowl and stir well. Add in Ingredients B and stir. Heat up enough oil in a pot for deep frying. Put a medium scoop into the hot oil for a while. Fill it 3/4 full with the batter and dip into the hot oil. After a little while, gently loosen it and let it continue to deep fry until browned on all sides. Continue cooking until all the batter is used up. The fritters look beautiful with a roundish shape.
You can also pan fry it into small pancake fritters as shown in the picture here. They taste equally good. This flat fritters taste soft while the deep fried ones taste crispy on the outside and soft on the inside. You can also use half of the batter for the deep fried type and the other half for the flat types. You can also omit the crab sticks to make vegetarian fritters. Eat it with your favourite dipping sauce. I just love it with chili sauce.
