This is another fast and easy dessert for any occasion. This coconut rolls, called ‘kuih ketayap’ or ‘kuih dadar’ in Malaysia is a very popular dessert. It is often eaten for breakfast, for tea time or during parties. It goes very well with a cup of tea or coffee. My recipe here:
Ingredients A (pancake)
pinch of salt
200 ml water
pandan essense (a few drops)
Put egg, salt and sugar in a bowl and beat. Add the water and flour. Stir well until no more lumps. Add the pandan essence and mix. If you don’t have it, you can substitute with a little green colouring. Leave the batter aside for 30 minutes.
Ingredients B (coconut filling)
40g gula Melaka (palm sugar)
1/2 packet dried coconut powder
pinch of salt
1t corn flour + 1T water for thickening
1 & 1/2 C dessicated coconut
Put the water into a small pot. Add the gula Melaka and salt. You can get the gula Melaka from Oriental supermaket. Substitute with brown sugar if you don’t have but the taste will be different. When the sugar has dissolved, add the coconut powder and stir well. Add the corn flour mixture. Stir to thicken. Lastly add in the dessicated coconut and mix well.
Make the pancakes. I made quite small one and was able to make 7 pieces. Divide the filling equally among the 7 pieces of pancakes. Use less if you don’tlike it so sweet. I like it sweet. Put 1 tablespoon of the coconut filling near to one edge of a pancake and then roll it up into a parcel. Enjoy.
