My family loves Thai food but not when it is too spicy. On a recent trip to Richmond, we decided to go for Thai food for a change. It is quite a small shop. As usual, when we go to a new place to eat, we will only order a few dishes to try out first, usually the popular ones.

We ordered an omelet appetizer, a vegetable, tom yam soup and a beef green curry, our usual favourites. All the dishes look nice as shown in the pictures here but not all of them tasted excellent.

Have A Dream

My blogging journey is really a very challenging, exciting and enjoyable endeavour. It is all about my dream to become a blogger and a good one. It never got off my mind since about 4 years ago. I never gave up learning for more even though it was so confusing. All the terms just blew my mind even until today but I’m learning. I bought a course back then but it wasn’t helpful at all. It didn’t teach me all the installation and how to run a good blog.  I put off for quite long after I became too busy with my teaching and family.

I know many people say it’s very easy to start one…just go to Blogger for a free one and start writing, about anything. But that’s not what I want. I really wanted to know well what is blogging, its potential and how to blog well to reach that potential.

Rum Sultana Cake…..oh what a lovely cake…..soft, moist and so full of flavour. The name should explain it all. This cake is egg free and dairy free. I’m so thankful to Chef Jeena for all her advice, help, tips and her recipe. She is a very sweet and helpful chef. She has a lot of healthy, nice recipes on her blog.

It was really worth sacrificing my precious sleep to make this cake the night before! By the time my cake was cooked, it was near midnight. I had to find ways and means to cut corners because half way through I was so sleepy. I’m so thankful that the cake still came out very well.

Cabbage rolls…a delicious and beautiful dish. A Chinese friend cooked this dish for me one day. I still think of it often. I tried once but my cabbage rolls came out in difference sizes. Hers were all same size, dainty and neatly arranged on a plate. I tried it again yesterday and found that I have improved a lot. I couldn’t make as dainty as hers but at least they come out same size. Feel quite proud of myself. My family liked it very much. It is not difficult to make. The ingredients are very simple. After making a most amazing vegetarian curry the day before, I am just more determined to make simpler, healthy food. So, yesterday I decided to make a vegetarian appetizer of tomato, soya beans, avocado and watercress. It was really appetizing and a great starter. The colours were captivating. I am still so thrilled that I made a very successful healthy bread the day before. That was the first time I tried to make a healthy bread. Besides it is one that I played around with the recipe and still came out successful.  I can only say that cooking does take some courage, some creativity and some risk. And even if it fails, no one really knows. Just own it as your own recipe! How cool is that?

Since I still have quite a few of the buns, I decided to make butternut squash curry to go with them. That was such a great combination……bread soaked in curry gravy. My Best Healthy Avocado Sandwich, a marvellous vegetarian sandwich, is a direct inspiration by a nice foodie friend who loves healthy food and blogs about it. She’s Divina Pe and has a blog, Sense & Serendipity. Her recent blog post, Healthy, Sexy, Cool Avocado Sanwiches, showed how to make an easy, impressive avocado sandwich. The pictures were so captivating that I had to try it. So yesterday I made a very nice, wholesome bread from spelt flour and finely gound seeds to make this avocado sandwich. Golden, soft cheese scones

I went with a friend to a cafe last week. There were a few types of cakes and a tray of cheese scones. Thought I would go for something light and went for a cheese scone instead of a slice of cake. It was afternoon so I thought that is good with a cup of coffee.

But when the cheese scone came, I knew I am in for a bad surprise. The look was enough to tell a disappointing story. It looked dry. When I touched it, it was hard. I think I can throw at a bird and kill it. Nevertheless, I managed to finish it in slow bites and slow chews. I just feel that those cheese scones were overnight ones.
