You don’t even need to go and buy a baking tin or a mixer. If you don’t have any baking gadgets, all you need is a medium sized cooking pot and an egg beater. If you don’t have a baking tin, just go and buy an aromatic duck which comes in a tin, bake it, enjoy a great meal and use the tin to bake your carrot cake! I love cooking with chicken because I love eating chicken. I only use chicken thighs for cooking because the meat is tender and juicy. Of course the only downside is to debone them. But then with some practice, it’s not that difficult. Do not throw away the bones. Use them to make a good chicken stock.

Ever imagine how life is like if everything around us is dull, grey or black in colour? I for one find Aberdeeen quite depressing during the cold winter months. Aberdeen is named a ‘granite city’ because most of the houses are built from granite. It looks dull, grey and gloomy in winter. On top of that, most people somehow love to wear dark or black winter coat. I think the cold also makes people smile less. So you can imagine the atmosphere and the life during such time.

There’s much beauty in colours, especially colours from nature. Bright, cheerful colours excites and refreshes and makes you happy that you just want to smile. To me, bright, cheerful colours relax my mind and make my mind think better, more creative and more imaginative. They make me optimistic too.

I like fast cooking. Any meal in 30 minutes and under is a fast meal. Sometimes I wonder if I spend more time thinking than cooking. I always look for tweaks, cheats and short cuts in my cooking but still not losing the tastes or the authenticity of a dish. In fact I try to put all my fast cooking recipes on this blog so that even if you are busy you can still cook a nice meal or make a nice appetizer or dessert.

Scotland Verses England - UK

Going to UK is an exciting experience. But staying in UK can be quite mind-boggling. I went to UK innocent and curious but along the way curiosity turned to confusion and frustrations at times.

UK is made up of Scotland, England, Wales and Ireland. I landed in Aberdeen, Scotland, which I find breathlessly beautiful. I love all the beautiful castles, the serene country feel and the simple, slow life compared to the hectic life in many other cities.
