It is important to eat fish because it is high in omega-3, especially cold water fish like salmon. Scotland is famous for its salmon. Fresh salmon is in abundance there.
If there’s anything, I would NEVER deep fry or pan fry salmon. The fishy smell would fill the whole house which lasts for many hours and just makes me sick. More than that, I also smell like fish. The best way is to bake it…..the Chinese way. It tastes so goooood! To go with a plate of fried noodles and a bowl of soup will just end my day well. This meal takes less than 30 minutes……that’s fast cooking. You can even listen to your iPod and enjoy your cooking. Recipe with pictures here:
2 pieces of fresh salmon
3 T light soya sauce
3 T sweet chili
2 t sugar
1 T fried shallot oil
2 T wine (Chinese wine or white wine)
Put salmon in a baking dish. Mix the rest of the other ingredients and pour over it. Leave it aside for 1 hour or overnight which I did. Put into a preheated oven at 200 degrees Celsius for 12 minutes. Do not over bake otherwise the salmon will taste tough. Drizzle some fried shallot oil over it, sprinkle some fried shallots and chopped coriander and serve hot with fried noodles and soup.
Fry the noodles and make a vegetable soup, if you like, simultaneously so that they all get cooked at the same time. Frying noodles is very easy and fast after a few practices. Check it out here.

Quote of the day……
“I choose gentleness… Nothing is won by force. I choose to be gentle. If I raise my voice may it be only in praise. If I clench my fist, may it be only in prayer. If I make a demand, may it be only of myself. ”
