My favourite, chewy brownies

Baking cake is one of my favourites and I love to bake for friends. It’s one of the ways to keep friendship fresh. Not only is it clean with little washing but the aroma that fills the house is just awesome. The most exciting is to see my children running into the kitchen, excitedly waiting for a piece of freshly baked cake. Oh…it tastes SO GOOD when it comes out fresh from the oven.

I was to meet some friends yesterday and decided to make my favourite chewy brownies for them. It’s really so easy, simple and fast. Again the cooking pot comes very useful just like how I used it to make my fast, easy, healthy carrot cake. Again, no elaborate baking gadgets involved. My friends loved this brownies. My recipe here with pictures:

Preheat the oven to 16 degrees Celsius. Line a lamington tin with baking paper.

Ingredients A
250 g butter
250 g dark chocolate
1 C brown sugar

Put all in a cooking pot to melt under low fire. Stir every now and then until melted. Turn off the fire.

Ingredients B
4 large eggs
1/2 C sugar
1/2 t salt
2 t vanilla

Beat and add to the chocolate mixture above. Stir well.

Ingredients C
1 C flour
1 C walnuts (chopped)

Melt the chocolate, butter and sugar

Melt the chocolate, butter and sugar

Add the flour to the chocolate-egg mixture above. Stir well. Lastly add the walnuts and stir.

Pour into the tin and bake at 160 degrees for about 30 minutes. Taste with a skewer for doneness. Do not over bake. I’m not too sure whether you can resist eating it while it’s still hot. I couldn’t!
