Fast, Easy, Healthy Carrot Cake
Looking for a healthy dessert? My best one has to be my Carrot Cake…..so full of goodness and awesome taste, yet so easy and fast to make.
No Baking Gadgets? Don’t Worry!
You don’t even need to go and buy a baking tin or a mixer. If you don’t have any baking gadgets, all you need is a medium sized cooking pot and an egg beater. If you don’t have a baking tin, just go and buy an aromatic duck which comes in a tin, bake it, enjoy a great meal and use the tin to bake your carrot cake! That’s what I do for this cake to show you so that you will have no more excuses of not making at least a healthy cake.
Recipe
Line tin with baking paper. Preheat oven to 180 degrees Celsius.
Ingredients A
4 eggs
1 C sugar
1 C salad oil
1 t vanilla
Beat up in the cooking pot.
Ingredients B
2 C flour
2 t baking soda
2 t cinnamon (optional)
I used one and half cups of whole meal flour and half cup of finely ground nuts for extra nutrients. Sieve it straight into the pot. Stir well.
Ingredients C
3 C finely grated carrots
1 C sultana
Add to above mixture. Pour into tin and into the oven to bake for about 50 minutes. Use a skewer to test for doneness.
Yeah….nothing taste better than freshly made cake, hot from the oven. Look at the carrot bits…I just love it! This carrot cake is moist and tastes fantastic. It keeps well in the fridge. Of course you can eat it with cream if you can’t be bothered with the extra inches to your waist. I’m just very happy eating just as it is with a cup of tea and a book to read.
See, never let anything hinder you from doing anything in life. Be innovative, be adventurous, be daring to try. Even if you make a mistake, no one would really know. That’s the beauty and fun of cooking. So…. keep learning, keep cooking, keep smiling and enjoy your food.
Hope you try out this recipe and let me know how you get along with it and how you like it. After some practice you probably need 15 minutes the most to prepare everything, wash up and into the oven. That’s fast, right? The rest is just waiting. Do something while you wait……..read a book, call a friend, exercise, listen to music, email a friend. But make sure you are in the kitchen or the timer is on!!
