Cashew Nuts Chicken
I love cooking with chicken because I love eating chicken. I only use chicken thighs for cooking because the meat is tender and juicy. Of course the only downside is to debone them. But then with some practice, it’s not that difficult. Do not throw away the bones. Use them to make a good chicken stock.
It was quite a relaxing day yesterday so I thought of cooking a chicken dish with cashew nuts, one of my favourite nuts. It is simple and easy to prepare. This is a very nice Chinese dish. Here’s the recipe with pictures:
Ingredients A
3 chicken thighs (debone and cut into strips)
1 T light soya sauce
1 T cornflour
Mix and marinade for 30 minutes.
Ingredients B (sauce)
3 T light soya sauce
3 T water
1 T sugar
1 t vinegar
1 t corn flour
3 T chili sauce (optional)
Mix all together in a small bowl.
Ingredients C (garnishing)
1/2 C cashew nuts (roasted)
coriander
Add 2 tablespoons of oil into the pan. When the oil is hot, add in the chicken pieces and fry. Turn over when the bottom is light brown. Cook till the other side is also light brown. Add in the sauce, stir and let it boil for a while till chicken is cooked. Dish up, sprinkle cashew nuts over it. Garnish with coriander leaves. Serve hot with white rice.
Well, this won’t be a complete meal without vegetables. I cooked a plate of broccoli to go with it.
What a good meal we have, a satisfying meal for 2! Nothing is better than home-cooked food. It’s fast, cleaner, healthier and cheaper.
