Healthy Vegetable Fritters
Problem eating more vegetables? Problems making your children eat more vegetables? Well, apart from hiding vegetables in dumplings, vegetable fritters is yet another great trick. It is so simple, easy and healthy. Serve it hot with sweet chili sauce will make anyone smile and love you for making it.
Recipe
Ingredients A
1 small carrot (peel and grate)
1 small zucchini (peel and grate)
1 spring onion (slice it fine))
A handful of green beans (slice it fine)
Ingredients B
2 egg
1 C flour
1 t chicken stock granules
1 T light soya sauce.
Have all the vegetables washed. Mix Ingredients B and leave aside. Serve hot with your favourite sauce. I just love it with a sweet, spicy chili sauce. Follow the pictures here if you are not sure.
Stir fry carrots and green beans in 2 tablespoons of oil from Ingredients A for a while. Then add in zucchini and spring onion and continue to stir fry for a little while more.
Dish the vegetables and add to Ingredients B. Stir well.
Then scoop spoonfuls of the vegetable batter into hot oil to fry. When it is brown on the bottom, turn over to fry the other side until golden and cooked. That’s it. Serve hot with your favourite sauce. I just love it with a sweet, spicy chili sauce.
This vegetable fritters is good for any time of the day. It can even be taken as breakfast or lunch. It is actually great for any occasions. It is a healthy food.
